Okay, let’s admit it: everything just tastes better when it resembles a noodle. And whether you’re a fan of “traditional” beets or not, this easy recipe takes them to a whole new level!
First, spiralize a red onion and beet. (Wear an apron and rubber gloves if you’re the least bit worried about red clothes or hands; beet juice will definitely stain!) Saute the beets and onion for 2-3 minutes in 2 Tb. olive oil.
Add 1/4 cup rice vinegar; cover and steam about 10 minutes, or until beets are either al dente or softer, if you prefer, adding water as needed to prevent sticking. Add sesame seeds if desired.
While the beets are steaming, spiralize up some zucchini, and slice half an avocado into wedges.
Top your curly zucchini with the beet mixture, sprinkle with sesame seeds, and add avocado and fruit or another garnish. And voila! Beautiful, colorful, and healthy too.
